Yesterday (7/1/2015), was mother and daughter day. My mom is off from work on Wednesdays and Sundays. Being a single mother, she has done very well raising me ’till this day. So on her days off, if I am not working, I try and save those days to spend time with her whether it is running errands together or just having a fun filled day. Usually the days involve a lot of running errands together but we always have a good time together. We needed to go to Queens Mall to purchase new bathroom rugs from Macy’s. So before shopping, we headed to Applebee’s to grab lunch. My mom ordered the steakhouse bruschetta sirloin (chunky Roma pepper relish is piled over our 7 oz. sirloin. Served with red potatoes and a grilled portobello mushroom cap stuffed with a creamy artichoke cheese spread.) My mom does not like her meat with too much pink so I asked for the meat cooked to medium well. Beef cooked to well-done will make the meat hard and rubbery to eat. In my opinion, anywhere from medium rare to medium well is a good temperature. My mom said the mushroom tasted the best. I had this before and I would have to say I agree with her. The steak was okay not the best.
I ordered the lunch combo of tomato basil soup with the Thai shrimp salad. Surprisingly it was pretty good. I enjoyed it.
Then we went to Macy’s and after that stopped by Bath and Body Works to purchase hand soaps. They were having a deal of 4 for $18, so we bought four different scented hand soaps. 🙂 Then we went on to our next errand on our list which was BJ’s at Skyview Mall. Went to BJ’s and purchased Oikos Zero greek yogurt for me and Sargento cheese slices for my mom to be used in her breakfast on her toast. Then we stopped by Famous Footwear located in the same mall to pick up the shoes my mom had ordered last week. After that stopped by Starbucks to get my ground coffee for my french pressed coffee in the morning. Finally, it was time to head home! So many things to carry and gosh was it hot! After dropping off all the purchased items, put away the yogurt and cheese in the refrigerator and cooling off a little, we headed back out to get groceries from H Mart (Korean supermarket). Tonight’s dinner menu was to be curry! I haven’t had curry in a really long time. After buying all the groceries, while my mom was cleaning the dish drying rack, I organized all the things we had bought today. Then it was time to prepare for dinner. I chopped all the veggies (onions, carrots and potatoes) and spam ham.
Then it was time to sautee the ingredients first before putting it into the curry. The korean squash which is placed in a separate bowl as you can see above, was not sauteed. Once the onions have turned translucent, that is when you know it is done.
Then we have a separate pot of water that is boiling already, we put in the korean squash that was set aside first. Then we put in the sauteed veggies and ham. Finally we put in the curry. Once everything is put into the pot, this is what it looks like! 🙂
Once the liquid has thickened a bit and the squash has been cooked but not overcooked where the squash is becoming nonexistent, we turn the fire off and it is time to eat with rice and some Korean side dishes! YAY! Feast time is always the best time! LOL
Then for dessert~~~ (Careful! you might get goosebumps after this comment) ^^ I met up with my fiance after about two hours to go to a cafe for a little bit to spend time together since we miss each other already after not seeing each other for two days. We went to a cafe in our town called “Cafe de Cupping”. He loves to get the Angeleno and I just got a hot Jasmine Petal tea. They had ripieno ice cream so we decided to try a flavor. I originally wanted the pineapple ripieno but they did not have at the moment so we got the peach instead. For those who do not know what a ripieno is, a ripieno is sorbet served in a carved out fruit shell that is frozen.
I have to say, this indeed was a fulfilling day of getting things done that need to be done but also enjoying life! 🙂
