Cilantro Lime Chicken with Roasted Sweet Potatoes and Sauteed Broccoli Meal Prep

So this week I decided to make Cilantro Lime Chicken with roasted sweet potatoes and sauteed broccoli. This recipe called for garlic powder but me having left over garlic from last week salmon recipe used it. Overall with cleaning afterwards took about two hours. It took a bit longer than I thought it would but make sense since it calls for roasting sweet potatoes for 21-25 minutes which was done while the chicken was in the fridge marinating for 30 or more minutes. Since I am meal prepping with the Instant Pot I got, for the roasting part, I used the pressure cook feature on high pressure for 22 minutes. Can not wait to try it on Friday after eating my last salmon from last week tomorrow.

I am all set now for the week until next Wednesday with 6 servings for this recipe. For 7 servings, the recipe required 8 boneless skinless chicken breasts but I used 7 breasts. I plan on buying groceries every Tuesday and cooking Wednesday on my usual days off so number of meals works out. Stay tuned for next week’s meal prep.
