My next recipe to try is Honey Mustard marinated chicken with sauteed garlic spinach. The original recipe for chicken did not have the spinach but found low calorie healthy side recipes and thought sauteed garlic spinach would complement well. This was the fastest recipe so far minus the marinading time which calls for at least an hour.
The original recipe calls for four servings so four chicken breasts but I have made it to six chicken breasts. While I went back to my mom’s house to bake for my hunny bear for our 9months as well as Valentine’s day, I brought the necessary spices and condiments needed for the marinade so the chicken can sit marinading in the mean time. Down below is the marinade. (stone ground mustard, apple cider vinegar, raw honey (I used agave), paprika, salt, pepper and cumin instead of garlic powder).

I first sauteed the garlic and spinach. Then cooked the chicken.

Having leftover marinade, I added some water and rest of marinade into the pot to simmer down to a thick sauce. As it was cooking I also scraped the bottom bits of the pan.

Once the sauce reduced to the thickness I was looking for, I poured it over the six pieces of chicken breasts.
