Was originally going to do mustard salmon rice bowl but the day I went grocery shopping the seafood market already closed for me to get freshly cut fillets. I looked around and found these big protobello mushrooms which I love. Got six of them in total. I first minced 4 cloves of garlic and then sprinkled salt and pepper. I sauteed them in olive oil in my instant pot. Once it browned i took it out and started cooking my portobello mushroom one by one. In the mean time I was cooking my brown rice in the microwave as per usual. I cooked about 5 minutes on medium heat per side for the mushrooms.
In the mean time, i drained and rinsed a can of chickpeas. Just like my last brown rice bowl drizzled a bit of olive oil and sprinkled some smoke paprika. With the last mushroom, i sauteed the chickpeas as well to save time. I mixed the garlic into the rice once the rice was down cooking.
To finish this bowl, top it with an egg or can opt out. I also pair it with the spicy homemade sauce my eemo made.
I had extra so gave one to eemo to try and said it was good. Made me happy 🙂 using knowledge of other recipes, made my own recipe for this one. Not bad. 🙂
