Chicken with Lemon Herb Sauce and Zucchini 08.10.19

For this week’s meal prep I found a chicken with lemon herb sauce recipe on food network. It really took only 30minutes total as I decided to add zucchini to my dish. It was an easy and fast recipe. I used a cast iron skillet as this recipe required the chicken to be cooked over the stove and finish in the oven. I decided to cook the zucchini in the sauce that was to be drizzled over the chicken and roast it a bit in the oven as well after cooking it first over the stove.




2 tablespoons extra-virgin olive oil

4 boneless skinless chicken breast halves

Kosher salt and freshly ground black pepper

Lemon Herb Sauce:

1 clove garlic, peeled

1/4 teaspoon salt

1/2 cup chopped fresh parsley leaves

1/3 cup chopped fresh mint leaves

1 1/2 teaspoons freshly ground black pepper

1 lemon, zested and juiced

1/3 cup extra-virgin olive oil
