I wanted to cook some food for my boyfriend so that he does not have to worry about what to eat for lunch at work. I found two quick and easy but delicious looking recipes online.
You marinade the salmon with lemon juice, garlic and parsley with some salt and pepper for about 10 minutes. You would place the salmon skin side up so the flesh is immersed into the marinade. While it is marinating in the fridge, you would set up the broiler in your oven and prep the vegetables. Vegetables are 1 bunch of asparagus trimmed, 1lb of red skin potatoes tossed onto a sheet pan with olive oil, salt and pepper. Place them on the edges of the sheet pan so you can place the salmon filets in the middle skin side down. Place them under the broiler in the over for about 10 minutes. It would come out as the picture below.
While the salmon and the vegetables were cooking in the oven, I started making the cacio e pepe. It requires 1 box of spaghetti (or any long pasta that you like), I used whole wheat spaghetti. You would also need parmesan cheese, had grated parmesan cheese in stock. In a pan that is shallow, fill up with water up to 1 inch of the pan. Start cooking the pasta in the water once the water is boiling. Make sure to salt the water well beforehand. Once the water has decreased to amount of just coating the noodles, turn off the heat and add in the cheese and pepper. Mix it well and you are done.
Divide them up into containers one serving per day and you are done with a weekly meal prep. Each dish makes for 4 servings. Two servings of the salmon meal we ate together that same night with dessert Keki (japanese fluffy cheesecake store in NYC) I loved the sweet potato one so I asked my boo to buy it before coming home after work from the city. It was a delicious satisfying meal. I had gave him a bit of pasta that same night to try and rest of it for the week to eat with the rest of the salmon dinner completing a 5 day weekly meal.
All in all, it was a great success!
