My take on the usual Kimchi Fried Rice (Kimchi Bokkeumbap) 03.13.19

I had some kimchi that was just the right amount of over ripe so I decided to make some korean Kimchi Fried Rice for this weekend to eat together for dinner on Friday and for my bae to take with him to work to eat for lunch the next day. I added in smoked spam ham some into the fried rice and some into the scrambled egg mixture. Instead of a fried egg I decided to make this scrambled egg topping with spam ham, onion and carrot. I also added in some korean spicy red pepper (gochugaru) to add a bit more spiciness.

The order was done as the following: First put some sesame oil into my cast iron skillet, once hot, put in 1/3 of the diced spam ham, once browned added in garlic and kimchi along with the little bit of kimchi liquid. Added in the korean spicy red pepper (gochugaru) and added in my rice. I had cooked the rice the night before and kept it in the fridge cold as fried rice is better with at least a day old or cold rice. Once all mixed and fried well together, I took it out. Then I added in my scrambled egg mixture which was 8 eggs beaten with the left over 2/3 of spam ham, one medium yellow onion, one carrot all diced similar size. Added in 1 tablespoon of salt. Once the mixture was cooked well, added in ripped sesame laver (gim) and pepper.

Layed the egg mixture on top of the fried rice. For my bae to take to work, I separated the two into two different containers. It was a nice pairing with beer last night. My bae really liked it and said it was really delicious. I was happy^^ Please stay tuned for more stories to come weekly.
