Gochujang Stew 09.06.20

For this week’s mukbang episode, I made my bae’s favorite gochujang stew(jjigae in Korean). Gochujang is Korean red pepper 🌶 paste. This is simpler than a lot of people think it would be.

First prep the vegetables. I used 2 small sized onions (can substitue with 1 large onion), 1 carrot, 1/2 of korean radish, 2 packages of cremini mushrooms, 3 korean long hot green peppers, green onion and 2 idaho potatoes. First clean the vegetables. Peel the potatoes, carrot, radish and onions. Then cut potatoes and radish into cubes. Dice up the peppers and green onion. Slice the onions and mushrooms.

Then in a large 6qt pot, first make the base with 6tbsp oil, 6tbsp gochujang(korean red pepper paste), 3tbsp red pepper powder and make chili oil paste. When it seems it has come together like the video below, add 6 cups of water and let it come to a boil.

Then add in 1lb of meat. I used grounded pork meat this time. You can use other cut of pork meat if you want cut into cubes. Also add in the radish, potatoes and carrot. Let it come to a boil and when it seems that ingredients have almost cooked through add in the rest of the vegetables saving the peppers and green onion for last.

Let them come to a boil again and then add in the separately prepared sauce. 1.5 tbsp minced garlic paste, 5tbsp korean soup use soy sauce, 3tbsp korean anchocy sauce, 6tbsp sesame oil.

Once all the ingredients are cooked through and let the soup cook with the sauce add in the peppers and green onion. Then it is done!~ ^^
