It is that time of year where I do my yearly christmas cookie goodie bags baking. This time of year was rather weird and frightening times due to COVID-19. Due to COVID-19, although I will have less people to give to, I am glad I have a good amount of people to give to this year as well.
This year, I have decided to do salted chocolate shortbread cookies, danish butter cookies and chocolate chip cookies. The first two cookies are recipes from Brown Eyed Baker and the last one is from throwdown challenge Bobby Flay’s recipe.
Unfortunately I was unable to take pictures of all the batters but I will be pasting the link to all recipes which you can see pictures there. I started with the salted chocolate shortbread cookies as they needed refrigeration time. (FYI: I doubled my recipe for all three cookies, chocolate chip cookies though came out to more like 2.5 times).
Salted Chocolate Shortbread Cookie Ingredients (x2):
- 2 1/2 cups all-purpose flour
- 2/3 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 2 sticks plus 6 tablespoons unsalted butter, at room temperature
- 1 1/3 cup light brown sugar
- 1/2 cup granulated sugar
- 1 teaspoon fleur de sel or 1/2 teaspoon fine sea salt (plus extra for sprinkling)
- 2 teaspoon vanilla extract
These cookies came out to be 55 cookies instead of 72. It might have been due to my cutting and I ended up with 3 shaped logs but I think I should have divided it into 4 shaped logs to get the full 72 cookies as the original recipe calls for the dough to be divided by 2 to be shaped into logs so making it into 4 makes sense. We all learn from mistakes right? ^^ It was okay though since I actually needed only 53. The rest is for me and my boyfriend to enjoy at home hehe.
Next up was danish butter cookies. I thought these would be fast but the piping part took so long x.x I was trying to use the tip to make it more decorative but with the tip on, the piping bag kept on exploding so I ended up giving up and just piping it in circles which came out still pretty nice.
Danish Butter Cookies Ingredients (x2):
- 2 cups unsalted butter (room temperature)
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 3 teaspoons vanilla extract
- 2 eggs
- 4 cups all-purpose flour
- Granulated sugar(for sprinkling)
Last one was chocolate chip cookies. These were the easiest and I would say you can’t go wrong with these. These came out really soft, chewy and buttery! I will make these every year.
Chocolate Chip Cookies Ingredients (x2):
- 4 cups plus 6 tablespoons all-purpose flour
- 1 1/2 teaspoon kosher salt
- 1 1/2 teaspoon baking soda
- 4 sticks unsalted butter, at room temperature
- 2 2/3 cups light brown sugar (the original recipe calls for two different types of sugar I just substituted with all light brown sugar)
- 4 large eggs
- 3 teaspoons pure vanilla extract
- The original recipe called for chocolate chopped into chunks but I just used semisweet and milk choclate chips
The labels I purchased on amazon and used the online avery tool to create them. Printed them and sticked them on!
