So to make different cuisine for my boyfriend’s lunch during the week, I decided to make some honey mustard glazed chicken thighs recipe courtesy from giadzy (one of my favorite Food Network Star Giada de Laurentis). This recipe is pretty simple which is why I chose this and it requires ingredients that I already had on hand. I doubled the recipe as I had 8 chicken thighs to work with.
Ingredients:
- 1/2 cup Dijon mustard (I used regular mustard)
- 1/2 cup tamari soy sauce (I used my Korean soy sauce)
- 1 teaspoon dried ground ginger (I substituted with ground nutmeg)
- 2 tablespoons honey such as wildflower
- 8 bone-in skin on chicken leg and thigh pieces
- 1/2 cup water

I cooked mine for the max amount of time 50 minutes.


To pair with this, I decided to make spicy tomato pasta. This is a one pot recipe.
I first cooked my whole wheat penne pasta according to the directions on the box. Once cooked, drained and set it aside.
I first sauteed korean luncheon ham (used half can, this is Korean style spam ham less salty) cut into small cubes. Once browned, I added in sliced onions sauteed until cooked. Once cooked, I added in bottled tomato sauce about 1/4 of a 24 oz. bottle. To that I added in some dried oregano, garlic powder and red pepper powder for spiciness. Also added in some salt and pepper. Once heated, I added in the pasta again and let it cook together and when almost done cooking, I also had some grape tomatoes which I added in. Then you are done!
